# Expert Advice:

01 -
  • It's honestly the kind of dinner where everything cooks simultaneously, so you're free to do literally anything else for half an hour.
  • The peppers release their own juices and create this natural, slightly sweet sauce that makes the whole pan taste like it took hours of attention.
  • Leftovers transform into incredible sandwiches, pasta toppers, or even next-day breakfasts without any additional work.
02 -
  • Don't skip flipping the sausages halfway through—I learned this the hard way when the bottom sides stayed pale and slightly rubbery while the tops looked perfect.
  • If your sausages are really thick, you can score them lightly before roasting, which helps them cook through evenly without any undercooked spots hiding inside.
03 -
  • Pat your sausages dry before placing them on the pan—any moisture on the surface will create steam, which prevents browning, so this one small step makes a visible difference in how gorgeous they turn out.
  • If your peppers tend to release a lot of liquid as they cook, give the pan an extra toss at the 15-minute mark so they're not sitting in moisture and can continue caramelizing.
