# Directions:

# Expert Advice:

01 -
  • It comes together faster than takeout, but tastes like you've been cooking all day.
  • The sauce is so balanced that even people who say they don't like cilantro end up asking for seconds.
  • You can prep everything while the noodles cook, so there's barely any scrambling at the stove.
02 -
  • The shrimp will continue cooking even after you take them off heat, so err on the side of slightly underdone when they're in the pan—rubbery shrimp is a tragedy that happens in seconds.
  • Don't add the sauce until everything else is ready, because the noodles will absorb it and get clumpy if they sit marinating for too long.
03 -
  • Toast your peanuts yourself if you have time—there's a richness to fresh-toasted peanuts that makes the dish feel more vibrant than store-bought.
  • Keep the lime wedges on the side and let people adjust the acidity to their taste; some people want extra brightness while others prefer the sauce more mellow.
